Veg box soup…

There’s nothing quite like warming soup on a cold wet day and here’s one of my recipes.  I admit it doesn’t look very glamorous, but served with warm bread it tastes sensational…


2 garlic cloves crushed
2 leeks chopped
2 carrots chopped
2 handfuls of baby spinach
2 tsp Olive oil
1 parsnip chopped
1 red onion finely chopped
Small handful of parsley
vegetable stock
salt and pepper to taste
seed sprinkles
Additional parsley for garnish

This soup is soooo simple to make. Fry the garlic and onion in the Olive oil. Put the lid on the pan so that the onion and garlic sweat a little. Once soften add the leeks, carrots and parsnips and cook a little more. Finally add the spinach, parsley and vegetable stock. Cook until the carrots and parsnips are soft.

Once cooked blitz with a hand blender or similar – I used my NutriBullet – add salt and pepper to taste then serve. I added some seed sprinkles and a few parsley leaves.
